The small bead-like formations, sometimes called “pearls,” occur when tallow cools at different rates, causing some of the fat molecules to crystallize separately. This is a completely natural process and does not indicate spoilage or a change in effectiveness.

3. Does the grainy or pearled texture mean my tallow has gone bad?
No, a grainy or pearled texture does not mean your tallow has gone bad. As long as there is no rancid smell or mold, your tallow is perfectly fine to use. The texture change is simply a result of natural fat crystallization.

4. Can I fix the texture if I want it to be smooth again?
Yes!  Simply warming it in your hands can help smooth out the texture.  Tallow softens quickly with body heat, so rubbing a small amount between your palms will gently melt any crystallized fat molecules, restoring its creamy consistency.
